Sourced from the Mata Vineyard in the heart of the Judean Hills, Flam Classico is a tantalizing Bordeaux-style red blend of 47% Cabernet Sauvignon, Merlot, 17% Cabernet Franc, 16% Merlot, 13% Petit Verdot and 7% Syrah that is aged ten months in oak barrels. The appearance is a cloudy garnet that lightens at the rim. Big fruity aromas pop out from this wine with lots blueberries, raspberries, and more red and black fruit. The smells are fresh without any jamminess. Lighter aromatic tones of oak and vanilla can also be detected. The wine it medium bodied and maintains strong acids but light taninns. The taste is filled with lots of fruit flavors and little bit of spice to give it a peppery finish. It is drinking well now, but will continue to age for 2-5 years. Pair with roast Cornish Hen or mushroom gnocchi. Flam Winery is probably the least known of the great wineries of Israel. It was founded in 1998 by the Flam Family in the Judean Hills near Castel and Beit Shemesh. Golan Flam is the winemaker, and he learned the art from his father Israel Flam, who was a winemaker at Carmel for many years. Their vineyards are in the Judean Hills and the upper Galil. This is a vegan wine.
